This recipe is a staple in our household, and for good reason. It’s easy to make, packed with protein and fiber, and can be customized to suit your taste preferences. Plus, it’s a great way to use up any leftover vegetables you have on hand.

Hearty Black Bean Chili Recipe

Servings: 6-8

Ingredients:

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 cups chopped bell peppers (any color)
  • 2 cups cooked black beans (canned or cooked from scratch)
  • 1 can diced tomatoes (14.5 oz)
  • 1 can crushed tomatoes (14.5 oz)
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika (optional)
  • Salt and pepper, to taste
  • 1/4 cup chopped fresh cilantro (optional)
  • Shredded cheese, sour cream, and diced onions for toppings (optional)

Instructions:

  1. In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and cook until softened, about 5 minutes.
  2. Add the minced garlic and cook for an additional minute, until fragrant.
  3. Add the chopped bell peppers and cook until they start to soften, about 3-4 minutes.
  4. Stir in the chili powder, cumin, and smoked paprika (if using). Cook for 1 minute, until the spices are fragrant.
  5. Add the cooked black beans, diced tomatoes, and crushed tomatoes. Stir to combine, then bring the mixture to a simmer.
  6. Reduce the heat to low and let the chili simmer for 20-30 minutes, stirring occasionally, until the flavors have melded together and the chili has thickened slightly.
  7. Season the chili with salt and pepper to taste.
  8. Serve the chili hot, topped with chopped fresh cilantro, shredded cheese, sour cream, and diced onions (if desired).

Customization Options:

  • Add some heat: If you like a little spice in your chili, add some diced jalapenos or serrano peppers to the pot.
